My friend Heather gave me a recipe for vegan chocolate and cinnamon cookies. They are easily the best cookies I have ever tasted, and the ingredients are commonplace in anyone's kitchen.

Mikel and I baked & demolished them last week.

Two cups of unbleached flour
Half cup of canola/vegetable oil
Quarter cup of water
One cup of raw vegan sugar
Half teaspoon of salt
One teaspoon of vanilla
Two teaspoons of baking powder
Cinnamon to taste
As much chocolate as you like (I use dark chocolate from the organic store, or 70% Lindt)

- Preheat the oven to about 180 degrees.
- Break the chocolate up into small chunks using a knife, or your hands.
- In a decent-sized bowl, mix the flour, baking powder, salt, cinnamon and chocolate together, creating a well in the centre.
- In another bowl, mix the sugar and oil together. Add the vanilla and water. Mix well.
- Pour the wet ingredients into the well of the dry ingredients, and stir until the mixture is at a doughy, slightly crumbly consistency.
- Shape the dough, placing it onto baking paper.
- Bake for seven minutes, rotate the sheets and then bake for another seven minutes.
- Take the cookies out while they are still quite soft, as they harden while cooling.
